Overview of Curd Rice

Curd Rice has calcium content content.Here instead of Curd we are going to use milk as main ingredient.

Seasonings are mustard,urad dal and red chilli

  • Mash the cooked rice well.
  • Add milk and butter to this mixture.
  • Blend well and then add curd to this milk mixture.
  • Finally add salt and seasoning to this rice.
  • Now curd rice is ready to taste.

Curd Rice

Ingredients

  • 1 tbsp oil
  • 1 tbsp mustard seeds
  • 1 tbsp Urad dhal
  • 1 tbsp Ginger
  • 1 tbsp Curry leaves
  • 1 tbsp Hing
  • 1 tbsp salt
  • 5 tbsp Butter`
  • 5 tbsp Curd
  • 250 ml Milk
  • 2 `no red chilli

Instructions

  • In a pan add oil and then add mustard seeds,urad dhal,ginger and red chilli.
  • Then add curry leaves to it and saute well.
  • Now add hing and salt to it.
  • Mash the cooked rice well and then add milk to it.
  • Now add butter and mash well.
  • Finally add curd and seasonings to it.
  • Now it is ready to taste.

Notes

You can also add carrot,pomogranate,grapes to this curd rice.
This will be healthy and tasty too.

Overview of Puliyodharai rice:

Puliyodharai rice is rich in vitamin C,iron.It is healthy when we consume it weekly once.

Overview of puliyodharai preparations:

  • In a pan dry fry,red chilli,coriander seeds,curry leaves,pepper along with hing.
  • Grind it to powder after it is cool down.
  • Now in  a pan add oil and then add seasonings to it.
  • Next add red chilli,hing,ground nut,curry leaves and channa dhal to it.
  • Saute for 3 mins and then add salt,tamarind extract to it
  • Boil it for 2 minutes and then add the grinded mixture powder to it.
  • Finally add jaggery to this mixture and allow it to reduce in quantity.
  • After it reduces add rice and mix well.
  • Finally puliyodharai is ready to serve.

Puliyodharai

Ingredients

  • 5 TBSP oil
  • 1 tbsp coriander seeds
  • 1 tbsp pepper seeds
  • 2 no red chilli
  • 1 tbsp hing
  • 1/2 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 1 tbsp urad dhal
  • 1 tbsp channa dal
  • 1 tbsp ground nut
  • 1 tbsp curry leaves
  • 100 ml tamarind extract
  • 3 tbsp jaggery

Instructions

  • In a pan add coriander seeds,cumin,red chilli ,pepper seeds
  • Saute well and grind to fine powder after cool down.
  • In a pan add oil and then add seasonings to it.
  • Now add channa dhal,ground nut and fry well.
  • Finally add turmeric and hing to it.
    After that add tamarind extract to it.
  • Boil well and then add jaggery and grinded powder mixture to it.
  • Then boil well until the oil gets separated.
    Now add mashed rice to this.
  • Finally it is ready to taste.

Overview of Karkandu Rice

Karkandu rice is sweet recipe.We are using white sugar instead of jaggery. Very simple sweet recipe.

Overview of Karkandu rice recipe:

  • Grind the karkandu to powder in  a mixer grinder.
  • Now add water in a pan and then add this powder to it.
  • Boil well to form a syrup consistency.
  • After that add rice and mix well.
  • Finally add ghee and ghee fried cashews,kismis to it.
  • Now karkandu rice is ready to taste.

Kalkandu rice

  • 250 grams Kalkandu
  • 150 ml Water
  • 75 grams Ghee
  • 1 tbsp Cashew
  • 1 tbsp Dry grapes

Instructions

  • In a pan add kalkandu and water to it.
  • Boil well to form a syrup.
  • Now add mashed rice to this syrup.
  • Finally add ghee and ghee fried cashews and dry grapes to it.
  • Atlast rice is ready to taste.

Sambhar is side dish in south Indian meals.So lets prepare this with rice in simple easy steps.

  • In a pan add oil and seasonings to it.
  • Add vegetables like carrot,small onion and tomato to it.
  • If needed add more variety of vegetables to it.
  • Now add salt,hing,turmeric powder,chilli powder and sambhar powder to it.
  • Saute for 2 mins and then add tamarind extract to it.
  • Boil it well and then add jaggery to it.
  • Finally add rice and then ghee to it.
  • Mix well and serve it.

  • 1 tbsp red chilli powder
  • 1 tbsp jaggery
  • 100 ml Tamarind extract
  • 1 tbsp curry leaves
  • 1 NO carrot
  • 1 no Small onion
  • 1 no drumbstick
  • 1 no tomato

Instructions

  • In a pan add oil and then add seasoning to it.
  • Now add chopped vegetables to it and saute well.
  • Add hing,salt,turmeric powder,chilli powder,sambhar powder to it.
  • Now add the tamarind extract and mix well.
    Finally add some water to this mixture and boil well until vegetables are boiled.
  • Now add the mashed rice and jaggery to it.
    Adjust the salt as per taste.
  • Finally add some ghee and ready to taste.
